ARANCINI WITH A TWIST

ARANCINI

 Servings – 8

 Ingredients:

·       2 Eggs

·       1 C Parmesan or Cheese of your choice, grated

·       1 Tbs Parsley, chopped

·       1 C Grated Carrots

·       1-3/4 C water

·       1 C Jasmine or White rice

·       1 Tsp Salt

·       1 Tsp Pepper

·       1-1/2 C Panko

·       2 C Olive Oil

Directions:

1.    In a medium bowl, whisk together eggs, cheese, parsley, carrots, panko, pepper, and 1 teaspoon salt. Cover and refrigerate.

2.    Combine water and rice. Bring to boil. Cook rice, covered, until water is almost absorbed, stirring frequently.

3.    Remove from heat and slowly pour into egg mixture, stirring rapidly to prevent egg from scrambling. Set it aside and cool for 1 hour.

4.    Preheat oven to Convectional bake 375F. 

5.    Dampen hands and roll rice mixture into 1 to1-1/2 inch balls. Place them on the cookie sheet covered with parchment paper.

6.    Bake for 30-45 min or until golden brown.
