Gnocchi


GNOCCHI RECIPE (pdf)

Pasta Ingredients:

  • 1 (8OZ) container Ricotta

  • 2 Eggs

  • ½ C Parmesan cheese

  • 1 Ts Salt

  • 1 Ts Pepper

  • 1 Ts Garlic Powder

  • 1 C Flour, or as needed

 Directions:

  1. Whisk both eggs.  Add ricotta, cheese, salt, pepper and garlic powder in a large bowl until mixed together. Mix in 1 C of flour.  Add additional flour if needed to form a soft dough.

  2.  Divide the dough, into 4 pieces, and roll into ½ inch rope on a floured wooden board.

  3. Cut each rope into 1 inch pieces.

  4.  Bring water to boil and add olive oil. Place all pieces, into boiling pot.  After pieces start to float, boil gnocchi for 5-7 min. 


Alfredo Sauce Ingredients:

  • ½ C Butter

  • 1-1/2 C Heavy Whipping Cream

  • 2 Tsp Minced Garlic

  • ½ Tsp Italian Seasoning

  • ½ Tsp Salt & Pepper

  • 2 C Freshly Grated Parmesan

Directions:

  1. Add the butter and cream to a large skillet.

  2. Simmer over low heat for 2 min.

  3. Whisk in garlic, Italian seasoning, salt and pepper for one min.

  4. Whisk in the cheese until melted.

  5. Serve immediately.


Tomato Sauce Ingredients:

  • 4 Lg Tomatoes {Cut into small pieces) or 2 cans of Organic Fire Roasted Tomatoes

  • 2 Ts Minced Garlic

  • ½ Tsp Italian Seasoning

  • ½ Tsp Salt & Pepper

  • 2 C Freshly Grated Parmesan

Directions:

  1. Saute tomatoes for 15 min or can tomatoes for 10 min.

  2. Add Italian seasoning, salt, pepper and simmer for a few more minutes.

  3. Whisk in the cheese until melted.

  4. Serve immediately.
