COLE SLAW WITH A TWIST

SERVINGS: 4

INGREDIENTS:

8 Oz Pre Shredded Slaw OR

1/4 Cabage Shredded

1 Lg Carrot, Shredded

1 Yellow Pepper

1 Red Pepper

4 Scallions

1/2 C Cilantro or Any preferable Herb

1 - 8 Oz Can Black Beans

Salt/Pepper to Taste

DRESSING:

1/4 C Olive Oil & 1 Tbs Sesame Oil

2 Tbs Red Wine Vinegar or Fresh Lemon Juice

1 Tbs Toasted Sesame Seeds

DIRECTIONS:

Turn on Convectional Broil to 450F. Cover Cookie Sheet with Parchment Paper.

Slice each pepper into 4 sections and each quarter into 1/8 inch slices. Spread peppers on the cookie sheet, broil on the middle rack for 15 min. Let it cool off. Dice scallions. In a large bowl combine all Ingredients. Add Dressing. Mix really well. Make sure, each ingredients is coated with dressing. Add salt and pepper to taste. Refrigerate for 2-3 hours.
