LATKES

Ingredients:

2 Large Onion

2 Lbs Gold potatoes, peeled

2 Lg Eggs

1Tsp Salt

1/2 Tsp Pepper

Olive Oil for frying

Directions:

1.      In a food processor chop onion. Take it out and place it in the medium size bowl.

Using a fine shredding disc of your food processor, shred potatoes. Take them out and mix it with onion mixture.  With your hands, try to squeeze as much liquid as possible.

2.      In a separate small bowl, mix eggs with salt and pepper.  Incorporate egg mixture into the potato mixture. Mix really well together.

3.      Add oil to a well heated skillet and using a soup spoon, scoop the mixture placing on a skillet, pressing on every latke with a spatula to flatten.  Don’t crowd them. Make sure there is space between latkes.  Once golden brown, flip it on another side.

Transfer them on the paper towel to drain all of the oil.

NOTE. Keep mixing the mixture between batches, the mixture tends to separate.
